1. Trim pansy stems to about 2 inches.

2. In a bowl, whisk egg white until they just begin to get foamy. With the pastry or paint brush, light paint the face and underside of each pansy with egg white (be sure not to coat too thickly). Holding over a dish, sprinkle evenly with sugar, shake off excess gently.

3. Place pansies face up on mesh drying racks and dry at 100°F (38°C) for 4 to 8 hours, or until firm and dry. Let cool. Trim off stems as desired and store pansies in a cookie tin at a cool room temperature for up to 1 week.
