Ingredients

1 cup Cashews

3 tbsp Lemon Juice

1 cup unsweetened dried Coconut

1 tbsp Agave Nectar

Directions

1. Process the cashews in a food processor until they resemble course flour

2. Add the coconut and process again until very well mixed

3. Add the lemon and the sweetener

4. Process again until resembling dough (if it is a bit too wet add more coconut or if it is a bit dry add a tiny bit of water)

5. Shape into cookies

6. Dehydrate in your Excalibur Dehydrator for 8 hours at 110 degrees F
