Salt & Vinegar Beet Chips

4 small-medium beets

1/2 cup apple cider vinegar

1/2 cup water

1 tbsp olive oil

salt to taste


1. Wash beets well.

2. Slice beets into 1/4" inch slicers. We recommend using a mandoline for even slices.

3. Mix vinegar, water and oil in a bowl and soak the sliced beets in the mixture for 20 minutes.

4. Drain beet slices and place them on Excalibur Dehydrator trays in an even layer. Make sure no slices are touching or overlapping.

5. Sprinkle beets with salt.

6. Dry at 125° F for 6-11 hours.
